I've been trying to stock the freezer with fully-cooked items to make quick meals. I took some advice from a bunch of different blogs and made a whole chicken in my slow cooker. UH-MAZING! I used a 3.5 pound chicken from my local butcher shop, sprayed it with olive oil cooking spray, and sprinkled on some of the BBQ Spice blend that I bought at the butcher. I made a little shelf out of foil, set the chicken on it, and after 4 hours on high, I had a perfectly cooked chicken...No fuss, no muss. I've been using the chicken in recipes all week and still have a 16 oz. container in the freezer.
So far, out of the chicken I've made curried chicken salad, herbes de provence chicken salad with grapes, and a buffalo chicken pizza.
I spent about $6.25 on the chicken and I estimate I will be able to use it as the protein in at least 6 meals. What a bargain! And so much tastier that those frozen chicken pieces.

Here we go again...
It has been an eventful few weeks since I started back to work. I've been interviewing for jobs trying to get into a school for the fall, but I think I have accepted the fact that I'm going to stay at my current job and substitute teach on the days I work late to try to bulk up my savings account to prepare to student teach. I made some great connections through my interviews and hope that they will help me when my certification is done.
I also just finished what I think was one of my most difficult semesters at school. All of my psychology requirements are done. PHEW! This semester is going to feel like a breeze...only 2 education classes to take, no major exams to worry about, and the most important Praxis I needed is passed.
